Mint Chocolate Chip Smoothie

Craving mint chocolate ice cream but don’t want the sugar and dairy? I got you. 

Simple, quick and a flavour explosion, this recipe is delightfully refreshing on a hot summer day and comforting as any other ice cream. Plus, better than the world’s most popular desert, it’s healthy enough to eat any time the craving hits.

Ingredients

1 cup oat milk 

3 frozen bananas

1 Tablespoon cashew butter 

1 Tablespoon maple syrup

2 date 

1 Tablespoon fresh mint leaves 

1 teaspoon vanilla 

¼ teaspoon Hawaiian spirulina (optional)

½ teaspoon collagen powder   

sprinkle of salt

1 Tablespoon cocoa nibs + 1 Tablespoon for sprinkling on top

Directions

  1. Place all ingredients in mixer, reserving 1 Tablespoon of cocoa nibs. Blend until smooth.

  2. Pour into two bowls or cups and sprinkle with extra cocoa nibs.
