Peanut Sauce

Peanut sauce always reminds me of traveling in Thailand. It goes especially well as a condiment to things like our Thai barbecue chicken, salad rolls, stir fries and more. I like to make my own because the store bought sauces tend to be full of sugar or use regular soy sauce, which contains gluten. This recipe is quick and easy to whip together and has a rich, peanutty flavour. Because peanut butters range in consistency and we all have different preferences for how thick we like our dipping sauce, I've included a simple way of adjusting the viscosity.

Ingredients

3/4 cup of peanut butter

2 Tablespoon of gluten-free soy sauce or tamari

2 Tablespoon fresh lime juice

2 Tablespoon coconut cream

1 small garlic clove

1 Tablespoon maple syrup 

¼ cup water

½ teaspoon zest of fresh ginger 

Directions

  1. Zest the ginger by taking skin off a thumb sized chunk and grating with a fine grater.

  2. Skin the garlic by smashing with a large knife. 

  3. Add all the ingredients to a blender or food processor. Blend on high until smooth and creamy, about one minute.

Tip: It’s easy to adjust the runniness of the peanut sauce to your preference. If it’s too watery, add 1/2 teaspoon agar agar or cornstarch and blend again. If it’s too thick, add one Tablespoon of water and blend again.
