Lemon Preserve Tequila Sour

If you love sour cocktails or classic margaritas, you will love this drink. If you like them both, this deliciously refreshing and super-smooth mix might become your new favourite. But first you need to overcome any reluctance to raw egg whites. We understand the concern, but there’s nothing eggy about this recipe and, as long as you don’t leave this drink sitting around - which you won’t - it’s food safe.
The key to this easy sipper is a double shake: first with no ice to work the egg whites into a thick froth, and then with ice to cool it down. The creamy egg whites contrast with the salty tang of the Lemon Preserve Base and both complement the funk of tequila. It’s a dream team for warm-weather sipping.
Ingredients
1 egg white, about ¾ ounce
1 ounce tequila
¾ ounce orange juice or lemon juice (fresh is best)
1 teaspoon Lemon Preserve Base
Directions
Pour all the ingredients into a martini shaker, but don’t add any ice. For the Lemon Preserve include the cream and lemon rind.
Shake vigorously for 30 seconds.
Now fill the shaker half full with ice. Shake for another 20 seconds or so.
Add ice to a cocktail glass. Strain the lemon-tequila sour mix into the glass.
Garnish with a lemon or orange twist. Enjoy immediately.
